Why is the fermented food cloudy?

The cloudiness of the liquid brine containing your fermented food is is due to millions of probiotic bacteria--specifically lactic acid bacteria--that fermented the food. (Pederson at 43). If the jar remains undisturbed in the fridge, the bacteria will settle, causing the brine to clear, and leaving a dusting of white on the food and the bottom of the jar.
